Shamelessly good lemon chicken

Ok, guys, it is so simple and so delicious!
You need
1. Chicken
2. Salt, pepper, olive oil, italian herb mix, 1 clove of garlic
3. one lemon
4. 2-3 potatoes and 1 onion, carrots, celery if you want, all omit all veggies listed under #4. (this line)

Preheat oven to 425-450.
Mix 3-4 spoons of olive oil with garlic, sea salt, italian herb mix and pepper
Rub the mix into and on the chicken
Cut lemon in 2 halves. Squeeze the juice over the chicken and stuff the lemon in to the cavity.
Cut potatoes, onions , carrots in very large chunks, lay them in the tray. You can pre-boil potatoes for 3 minutes or so.
Do not cover your chicken.
Place in the oven for about 45 minutes to an hour.
Oh it is so good!!!

The kid: he can help washing the veggies, mixing the herb-oil mix, rubbing it on the chicken. Make sure he washes his hands with soap very well, as they get so oily!!!
